Experience Details
Learn all about nerikiri, Japanese moist confectioneries made with sweet bean paste and soft mochi, from dough making and rolling to decoration techniques and motifs used in professional nerikiri-making. This intensive nerikiri course is led by a certified instructor from the Wagashi Promotion Association of Japan.
Often served alongside matcha in tea ceremonies, nerikiri confectioneries have a delicate, mild sweetness and feature beautiful seasonal designs that are incredibly aesthetic, for which they make amazing gifts.
Throughout 6 classes, totaling 13 hours, you’ll cover the basic nerikiri-making techniques and make 18 popular motifs, as well as try your hand at different types of wagashi.
Classes for this course are available over several days, starting at 10:00 a.m. You can take up to three classes in one day, if available. Get plenty of hands-on practice in making nerikiri with expert guidance, a rare opportunity that is perfect for wagashi sweets enthusiasts.
Course contents:
Lesson 1: Nerikiri dough making, basic techniques, inner gradation and sankakubo (triangle stick) techniques (3 hours)
Lesson 2: Outer gradation and sankakubo (triangle stick) techniques (2 hours)
Lesson 3: “Chakin” techniques (2 hours)
Lesson 4: Using the push bar (2 hours)
Lesson 5: Kinton (making nerikiri shreds using a strainer) and odamaki techniques (making nerikiri threads using a piping tip) (2 hours)
Lesson 6: Rolling out the dough (2 hours)
