For over 1000 years, wagashi (traditional Japanese sweets) have delighted people worldwide with their beauty and flavor. These delicate confections add color to each season, featuring elegant sweetness and charming patterns. Wagashi makers often draw inspiration from nature and art forms like poetry to create simple yet whimsical designs.
In this experience, you'll learn how to make nerikiri, one of the most intricate and ornate types of wagashi. Nerikiri is a soft, chewy rice cake filled with sweet white bean paste; its unique texture strikes the perfect balance of flavors without being too sweet. The dough is soft enough to mold into stunning designs, which your instructor will guide you through creating.
Your host, Yuki, is a professional cooking instructor who frequently appears on Japanese TV. She learned the art of washoku (traditional Japanese cuisine) from a chef who once cooked for celebrities and the Japanese imperial family. Yuki is passionate about sharing her expertise, and her warmth and enthusiasm make this experience one you won't want to miss during your time in Sapporo.
Follow along as Yuki demonstrates how to shape four delicate nerikiri pieces. The dough will be pre-made and pre-colored for your convenience, and the recipe is available upon request. Once you're finished, take a moment to admire (and enjoy) your beautiful creations!
