Using the finest selection of ingredients as well as constantly evolving and improving cooking techniques, Horikawa applies a variety of cooking and seasoning methods to bring out the true Northern Italian flavor. Their much-raved-about fiocchi dish is the restaurant’s specialty, which Horikawa mastered during his time in Piedmont.
