The ancient recipe for liguria corzetti, a medallion-shaped pasta, can also be enjoyed at this restaurant, and this restaurant alone in Japan. Another highlight dish is the wild boar shoulder, sourced from the northern alps of Nagano, and flame-roasted to perfection (making the meat of the wild boar moist and tender) then served with charred carrot sourced from Tottori, which is also wood-fired.
