Ginza Habsburg Veilchen bucks the trend of French, kaiseki, and sushi restaurants which dominate the area, instead focusing on presenting an authentic taste of Austria. Chef-owner Kanda has been certified by the Austrian state and recognized as an ambassador for this cuisine. In fact, he is the only one in Japan who can claim this title.


Austrian cuisine was inspired by the various ethnicities of the nation, with influences from all over continental Europe. Recreating such dishes is presumably difficult, but chef Kanda delivers an authentic taste effortlessly. It's been toned down a notch to suit the milder Japanese palate, without compromising the essence of the cuisine.


The most well-known dish is the Wiener Schnitzel, which is a deep-fried veal cutlet that's been lightly beaten and breaded with fine potato garnish. Another dish that lets customers experience the best of Austrian cuisine is the Wiener Rindsuppe, which is a consomme soup that's made of beef shank and root vegetables.
