On the surface, Ginza Torishin looks like another boutique yakitori concept in Tokyo. Under the bonnet, there is a serious commitment to properly executed food, fine wine and a high-fidelity ambiance, which the city is in great need of.
The familiar casual chaos of loud customers hungry for charcoal-grilled chicken skewers is thrown out in favor of a more elegant take on the cuisine. Sequestered in stylish Ginza 7-chome alley. Ginza Torishin runs its yakitori menu omakase-style, which means diners leave the selection to the chef.
The team presents its vision through the use of Date chicken, an exclusive breed from Fukushima Prefecture. The meat morsels are packed on a skewer and grilled over binchotan charcoal, which deliciously locks in the flavor. And if there is a further need to prove that Ginza Torishin means serious game, its signature-defining chicken wings are served in Guadalquivir tableware from Hermes.
