The soul of Iroha’s cuisine lies in its devotion to ingredients. Only the finest Kyushu-raised jidori chicken is used, hand-selected for freshness and depth of flavour. The chicken is slowly simmered to create a rich, milky-white collagen broth, free from artificial seasonings, resulting in a velvety texture and natural sweetness. Meanwhile, the A5 Kuroge Wagyu, prized for its delicate marbling and melt-in-the-mouth tenderness, is prepared as sukiyaki or shabu-shabu to highlight its balance of fat and umami.
