For an experience which aims to be a cut above the other high-end sushi establishments of Tokyo in terms of service, innovation, and quality, Hatsune Sushi (sometimes spelled Hatsunezushi) is the place to go.


The chef embraces the roles of host and entertainer as much as his main role as the cook, with a warm demeanor that will make you feel relaxed from the moment you walk in. His refusal to blindly follow convention means that you’ll have some memorable experiences in his store.


For example, don’t expect plates for every dish — Hatsune-san will hand you many of his creations directly after making them in front of you, with a short explanation of what you’re about to try. You may also be surprised to hear that he warms many of his cuts of fish on a hot plate before serving, or that he uses a very rich red vinegar with his rice for a strong and complex taste.


The number of dishes in the set course is generous, featuring a salad and appetizers, followed by cuts of fresh bluefin tuna, then a series of perfectly assembled nigiri. The menu changes according to the season, but you can expect most of the classic varieties alongside some unusual concoctions unique to the store.
