Kanazawa Gyokusentei resides within the walls of a 200-year-old samurai residence once linked to the Kaga Clan. The restaurant preserves much of its former architecture, with daylight filtering through the traditional shoji screen and sturdy dark wooden beams supporting the earthen walls.
The ryotei is nestled within the Gyokusen-en Garden, which is said to have taken a century to complete during the early Edo period. With the seasons, the garden landscape transforms: in spring, it bursts into verdant life; in autumn, the foliage turns a blazing red; and in winter, the leaves give way for the snow to drape the bare branches. The 400-year-old Korean pine tree stands out among others, and an ancient teahouse sits on top of the hill.
The dedication to kaiseki cuisine is palpable — such is the celebration of Kanazawa’s seasonal changes. Small plated portions feature local delicacies. Fresh seafood is sourced from nearby waters, while vegetables are grown in Kanazawa's fertile lands. There is a subtle embrace of Western influences, but they never overshadow the delicate flavors of local produce.
Diners can stroll around the garden during the day — although the walk is particularly breathtaking in the evenings when the garden is lit. Private tatami rooms cater to families with children and offer panoramic views of the pond, while the 'Senso' room showcases a different perspective of the garden.
