MAZ is the passion project of chef Virgilio Martínez, founder of the legendary Central Restaurante in Peru, and director of Mater Iniciativa, a research and non-governmental organization that seeks to promote food diversity beyond borders. Combining French and Spanish influences into innovative, beautifully plated dishes, MAZ’s commitment to cross-cultural promotion took it straight from zero to two Michelin stars in 2024 — an unprecedented feat.
Martínez’s philosophy is afuera hay más — “there is more outside” — and defines every step of your gastronomic journey. Each themed menu at this Akasaka-Mitsuke restaurant is centered around Peru’s great biodiversity, taking guests from the magnificent Andes to the sprawling Pacific coast. Their Vertical World courses engage guests in a journey of altitudes, strengthening the connections between the landscapes and cultures of Peru and Japan through carefully selected ingredients.
