The chef at this 3 Michelin-starred Sapporo restaurant holds the island of Hokkaido — the richly-stocked pantry of Japan — close to his heart. His is a style of cooking in harmony with the natural splendor of this place, and the seasonal changes which it undergoes throughout the year.
This is further accentuated by the beautiful floor-to-ceiling patio doors which look out onto a wooded area of Maruyama Park. Diner can enjoy bright afternoon sunshine, or the atmospheric sight of sunset descending over the park.
As for the food, Chef Hiroshi Nakamichi and his team of diligently trained staff serve up some of the best French food in Sapporo using only fresh regional produce, such as local foie gras, and the potatoes and sea urchins for which Hokkaido is famous.
The results include outstanding dishes such as a carpaccio of turbot fish with seasonal vegetables, and roast duck with a salsify confit. For a relaxing and rejuvenating dining experience, there are few restaurants on the island that can rival Moliere.
