It didn’t take this Tokyo kaiseki long to receive its Michelin star after opening in 2016. The restaurant is a co-venture between a skilled chef with experience in both Tokyo and Paris, and a professional sommelier.
This of course means great wine pairings are available to accompany the traditional omakase (chef’s choice) meals. The spotlight is on the home prefecture of chef Ishida: Tokushima. Sea bream is a favorite ingredient here, so expect to find this versatile fish in several styles.
Table seats and a single private room are available, but this style of traditional Japanese dining is only fully enjoyed with a view of the kitchen. Sitting at the counter means you can watch the whole process of preparation, form start to finish, and truly appreciate the skills of the chef.
