Someone with no knowledge of the French language might be confused when picking up Pot-Bouille’s menu for the first time. While its nomenclature sounds decidedly French, the menu offerings are a kaleidoscopic assortment of cuisines from all over the world, ranging from grilled mackerel and capers with fried potatoes, to crab cream croquette, to ramen in Thai tom yam soup.
But that’s precisely what “pot-bouille” means in French — a melting pot. From behind the wide, U-shaped counter (there are no tables in the restaurant), Chef Minoru Yonaha serves up varied global cuisine with skills that were finely honed during his stints in famous Italian eatery La Bisboccia in Shibuya, and the former French restaurant L’eau a la bouche.
