Chef Yasuyuki Takara opened this fine French restaurant in 2018, and it already holds a Michelin star! The name translates from the French to “ripening,” referring to the seasonal ingredients themselves, the chef’s own culinary skills, and the relationships between his restaurant and the customers. Takara-san also spent considerable time honing his skills in France, learning about all the rules and ingredients of their complex cuisine.
The greatest artists are those who bend and break the rules, which is exactly what chef Takara does with some innovative combinations. These include fugu blowfish served with roquefort cheese, and foie gras terrine with Japanese seasonal fruits.
