Wagyu
Flame, marble, and the quiet craft of a Ginza evening.
Restaurant Details
On the third floor of a quietly distinguished building along Azuma-dori in Ginza, Tokyo, a different kind of evening begins. Teppanyaki Shiroya Ginzatei is a reservation-only teppanyaki restaurant where Japanese cuisine is understood as something that belongs to the senses entirely — the low sizzle of wagyu meeting hot marble, the rise of steam carrying the smell of the season, the unhurried movement of a chef who has learned to let the ingredient speak.
The interior divides itself between two moods. The main floor centres on a black marble counter where twelve guests sit close to the flame, watching each component of the meal arrive with purpose. Beyond it, a secondary room — warmer in tone, lined with white walls and natural wood — offers a more enclosed atmosphere for gatherings and private dining. Both spaces carry the same stillness: the kind that does not feel imposed, but earned.
The kitchen draws from producers across Japan, composing its courses around what is honest and seasonal. Kita-Satsuma wagyu from Kagoshima — raised over thirty months, its fat refined and low in melting point — forms the heart of the dinner menu. Around it: live spiny lobster, wild abalone, and vegetables chosen for their moment. The premium restaurant also holds a considered wine list and an assortment of sake, available to those who wish to extend the evening further.
A meal at Shiroya Ginzatei does not announce its end. It simply settles into you, quietly, on the walk back into the Ginza night.
