Zoshigaya may not be the first place that comes to mind when thinking of sushi; fishmongers will guide you to Toyosu for the freshest catch, while Michelin critics put Azabu Juban on the radar for any new omakase venues. Zoshigaya? It’s often an afterthought, a backdoor to Tokyo’s crowded Ikebukuro, frequently overshadowed by its buzzier counterpart. But this is where Sushi Okuyama has established its home, quietly gaining traction among in-the-know locals.


The hallmark of Sushi Okuyama lies in its flavors and textures — or rather, the exploration of it — in a manner that seems deceptively simple. The offerings include rich, fatty tuna, Spanish mackerel, yellowtail, shrimp and ark shell, each piece gently cradled by perfectly molded sushi rice.


But among all the first-class nigiri lineup, his kappa maki — a pared-back but also incredibly crunchy cucumber slices rolled into sushi — is a standout. The omakase course, which consists of several nigiri and sushi rolls, often ends with fruits that the owner picks himself.


For now, Sushi Okuyama remains a hidden gem, eschewing flashy decor for a more intimate ambiance. The interiors are accented with warm wood, from the deep-toned slab mounted on the wall to the smooth counter and the thick cutting board behind the chef. Dining here feels reverent, as if sharing a secret moment between just you and the chef.
