Most guidebooks will tell you that Shinto and Buddhism are the biggest faiths in the Land of the Rising Sun, but don’t be fooled: sushi is the true religion of Japan. Hidden away in a Ginza basement is one of the capital’s top shrines to the faith. Sushi Tokami was opened by a young chef in 2013, achieving Michelin star status within their first year. His understudy, Shota Oda, took over in 2018, and has continued delivering the same high degree of excellence. Take a seat and enjoy an omakase course which features a range of exquisite tuna cuts. Even the rare variety cut from the base of the head is served here, alongside the usual fatty flesh and lean meat. After an incredible series of nigiri, your meal will reach a crescendo with one of the best tamagoyaki (omelette cakes) in the world. The surface is lightly caramelized, which creates an interesting texture and enhances the sweetness of the sauce inside. Popular among foreigners, this sushi shop is consistently ranked among the top 10 in Tokyo, so make sure you never pass up a chance to go.
