In Tokyo's Minami-Aoyama neighborhood, where understated elegance defines the streets, Sushi Riku occupies a quiet first-floor room that seems deliberately set apart from the pace of the city around it. There is no grand signage, no performance. What greets guests instead is a six-meter counter of solid hinoki cypress, sourced from Mie Prefecture — its grain smooth under the light, its fragrance a soft presence that settles over the space like a whispered welcome to Japan.
Behind that counter stands a chef whose three decades of quiet devotion to his craft have shaped a deeply personal approach to omakase sushi. He does not seek to impress through abundance. He listens — to the fish, to the season, to the subtle changes that arrive without announcement. Each morning, he considers what the day's seafood is actually saying, and only then decides how little he needs to do to let that voice come through.
The result is Japanese cuisine shaped by restraint. A piece of fatty tuna carries the cold of the sea within its warmth. A seasonal whitefish, barely touched, dissolves into something like memory. The shari — seasoned with the chef's own red vinegar blend — binds each piece with a gravity that only years of repetition can teach.
Sushi Riku offers both omakase lunch and dinner courses, as well as a private room suited to quieter, more intimate occasions. Whether one arrives for a milestone or simply for a meal, the evening tends to leave something behind — a stillness, and the particular satisfaction of having eaten with care.
