Having been in operation since the Showa era, Yakiniku Manno prides itself on its extensive connections with wagyu cattle ranchers from all over the country, having been built up over almost a century of business. The selection process is prefecture-agnostic — while many yakiniku restaurants pride themselves on serving specific brands of beef like Kobe beef, Matsusaka beef, or Miyazaki beef, Yakiniku Manno’s staff will go to all corners of Japan to find the best beef.
Every aspect of the cow is taken into account, from how carefully each cow is raised, to the air quality and feed quality of each. Only those that pass muster will be contracted with Yakiniku Manno’s restaurants, joining the ranks of what the restaurant calls “Gokujo Manno Wagyu,” or as they translate it in English, Premium Queen’s Beef.
Why “Queen’s?” One of the main criteria that Yakiniku Manno selects for is that all cattle served in their restaurants must be female, for their softer meat and less gamey flavor. They must also be fattened for at least 30 months, and their fat must also havean especially low melting point.
Naturally, this meat is treated with the utmost respect: it must be served no later than 10 days after the initial slaughter — Manno is so particular about freshness that it claims it will refuse meat that other yakiniku restaurants would still serve. Its in-house butchers are trained to cut the meat with millimeter-close precision.
