The company which runs this central Tokyo restaurant came from humble beginnings, with just a simple Nihonbashi food stall serving up nigiri in 1891, from which they served nigiri sushi to businessmen on the go. Nowadays they do the exact same thing in the same area (albeit in a comfortable shop instead of a stall).
The lunch here is fantastically priced, so they have a host of regulars who live and work in the area. This isn’t the long-form lunch of your typical high-quality sushiya. Yoshinozushi Honten’s daytime service harks back to the days of sushi as a quick, fresh, delicious meal for the busy traders and laborers of the Edo Period. That means you can have a full platter of pescatarian freshness, or a jam-packed sushi rice bowl, served up in just minutes.
The evening service is a more relaxed affair, when locals will come in to enjoy a set course omakase dinner along with some glasses of sake. No matter when you go, you’re guaranteed a host of premium ingredients, using authentic, fresh-grated wasabi.
The tamagoyaki is a favorite, with an unusually thin and wide shape that drapes over the edges of the nigiri rice bed.
