In the heart of Shizuoka Prefecture, you'll find Kakuya Bessho, a kaiseki restaurant offering a unique dining experience showcasing the freshness and depth of local flavors. As you step into the restaurant, you'll be greeted by its sleek interior with wide windows that offer a serene view of the greenery outside, setting the perfect atmosphere for an unforgettable evening.


At Kakuya Bessho, Chefs Akahori and Suguro are masters in harnessing Shizuoka's local ingredients to create dishes that highlight seasonal produce and elevate them to new heights. From a rare, fatty breed of horse mackerel from Suruga Bay (known as Kurosawa no aji) to small-batch, locally brewed Japanese sake, all the ingredients are carefully selected to reflect the essence of Shizuoka (exact course menu contents are subject to change depending on availability and seasonality.) As you settle in for the multi-course kaiseki meal, an English-speaking interpreter will guide you through the culinary journey, ensuring smooth communication and understanding.


Prepare to be amazed as the chefs display their culinary prowess, skillfully fileting fish and preparing dashi stock. The air will be filled with the savory aroma of their signature dashi, which you can also taste and learn about its preparation. The chefs will also show the traditional technique of kombujime, which infuses raw fish with a depth of umami by marinating it in kelp. The meal is expertly paired with fine wines, Japanese sake, and delicate teas, enhancing the flavors and elevating the overall experience.
