Did you know that bonito flakes (katsuobushi) are the foundation of Japanese cuisine? This traditional ingredient is essential for making dashi (Japanese broth), which gives dishes their deep, umami-rich flavor.


In this unique Kyoto masterclass, you'll not only learn about bonito flakes but also experience shaving them by hand—a rare opportunity even in Japan! Discover how different aging techniques affect taste, compare five types of umami, and deepen your understanding of Japanese culinary traditions.
