In this private experience at a soba restaurant in Sapporo, you will use local buckwheat to make soba noodles from scratch, then enjoy them with tempura and Hokkaido sake.
Your session begins with an introduction from a skilled soba craftsman. You will learn how soba is made and why Hokkaido’s ingredients play a key role in its flavor and texture. Then, you will step into the process yourself.
You will start by kneading the dough, feeling how the texture changes as it comes together. Next, you will roll it out and carefully cut it into noodles. With guidance throughout, you will shape your own soba from start to finish, even if it is your first time.
Once your noodles are ready, you will sit down to enjoy your meal in the restaurant.
Before eating, you will experience sobamae, a traditional custom of enjoying sake before soba. You will taste two types of Hokkaido sake, each chosen to complement the meal.
Your handmade soba will be served alongside a plate of freshly prepared tempura, offering a balance of light texture and rich flavor. This combination highlights both the simplicity of soba and the depth of local cuisine.
