Bruce H. was a great guide for a newcomer to Fukuoka. Best tempura I had during my whole trip! Bruce was interested in explaining life in Japan and answering every little question. Walking the streets of the city was fun with someone so knowledgeable. His tour made for a really nice afternoon.

This was a great experience and well worth the 30 minute train journey from central Tokyo. We were met at the station and shown around the local food market before we went to cook. She had some pre-prepared items which required pickling or seasoning for a few days, so that we could have the full bento box making experience. It was an exceptional lesson, with some good information about the history of bento including as a side. Overall, it was a friendly, communal cooling experience, with some excellent food.

With a group of three people we had a great time with our host Miho san. She has great experience teaching Japanese cuisine to foreigners and was very welcoming. She speaks fluently English and even German which I personally enjoyed. Making bento in a short time is quite challenging as there are many different dishes to be placed in the bento box and preparing all of them takes time. Luckily Miho was well prepared, so we managed to create a nice bento box for everyone. Everything tasted great and I would love to go again.

Outstanding and memorable food experience. One, Bruce knows his stuff, and Hakata knows him. You should see 'em jump to attention at the Ritz when he comes in. Second, he's responsive to what the client wants but third, most important, he's got a plan B for force majeure situations. We had a great walk and enjoyed a lunch of o-den and fresh tofu prepared various ways, al fresco on the lake, authentic and all local. An experience I couldn't have had on my own. Travel is too valuable to waste putzing around, get someone who knows the territory like Bruce to take you straight to the good stuff.
