The chef spent three years studying in Italy, and his omakase course meal of small dishes provides a series of tastes gathered from around the country, prepared with a mix of tradition and creativity. The pumpkin with foie gras is an excellent example of this.
These dishes are realized with the use of seasonal Japanese ingredients, small floral garnishes bringing the plates to life with splashes of pink, lilac, and green.
