The top spot among Kyushu’s sushi masters is fiercely contested, but one man who can put forward a strongly convincing claim to the crown is Osamu Muto. This top host provides a very foreigner-friendly and entertaining atmosphere while presenting some of the best sushi in Fukuoka.
His appetizers are a cut above in both variety and luxury, including a seafood salad, kawahagi in liver sauce, whale bacon, and monkfish liver. Expect classic nigiri with pufferfish, sea urchin, whiting, and irresistibly melty fatty tuna. The fatty tuna roll with “umibudou” sea grapes is a house specialty, as is the Kumamoto beancurd which takes six hours to prepare.
