In the narrow backstreets of Noge, a lively old quarter in Yokohama, Japan, just across the station from the towers of Minato Mirai, a quiet sushi counter continues a lineage first built in Tokyo over a decade ago. Noge no Onikai carries that heritage forward while settling into its own rhythm, shaped by the character of this port city.
The entrance gives little away—no signage, just a small door tucked beside a stairway, opening onto a room warmed by wood and the low hum of conversation. Eight counter seats face the chef directly, close enough that the tap of a blade against a cutting board and the faint brine of fresh seafood reach every guest before the first piece of nigiri arrives.
Here, Edo-period technique meets a more playful reading of sushi, one that treats tradition as a starting point rather than a boundary. Rice, vinegar, and fish are handled with the discipline central to Japanese cuisine, then reassembled into an omakase course that feels unhurried and personal rather than performative.
A hand-rolled ebi tempura maki, wrapped tableside, has quietly become the house's signature—crisp shrimp folded into warm nori and rice, best eaten within moments of being handed over. Alongside it, seasonal seafood chosen that same morning moves through the counter in a steady, unannounced sequence, often paired with sake or wine chosen to complement each course.
