In Kanagawa Prefecture, where the Sagami River winds through a city shaped by commuters, quiet neighborhoods, and the practical rhythms of everyday life, Goemon Sagamihara Station offers an evening apart. Just a short walk from Sagamihara Station, this izakaya carries a simple conviction: that the most honest Japanese cuisine is the kind built around fire, time, and a pot that never stops simmering.

The interior settles around a counter designed for watching. A skewer chef tends the grill throughout the evening — steady, unhurried, attentive — while the smoke from the yakiton rises in thin columns above the pass. It is the kind of atmosphere that asks nothing of you except that you slow down.

At the heart of the menu is the motsu nikomi, a slow-cooked offal stew prepared fresh each day in a large iron pot. Five cuts of pork offal are simmered together over hours, the broth gradually deepening into something rich, layered, and quietly complex. Made in limited quantities, it is the dish that defines the evening — and when it runs out, that, too, is part of its character.

The yakiton — pork skewers grilled to order — move through cuts both familiar and unexpected, each seasoned with a light and considered hand. Beyond the skewers, the menu extends to marinated offal plates, chilled sliced meat, seasonal hot pot, and a range of small dishes made to accompany sake or shochu at whatever pace suits the night.

At Goemon, time passes easily. The pot stays warm. The next skewer arrives without asking.
