In a residential area of the city of Akita, Chef Hiroko Takamura established a restaurant which bears his name. Here he serves up creative kaiseki cuisine, the Kyoto-born style of cooking with its roots way back in the Edo Period.
His small plates bring a fresh, chic feel to some old classics, with a hint of French haute cuisine in their attractive presentation: a selection of edible little gems. Take for example the small platter of delicious morsels featuring cubes of tofu and vegetables, and a chunk of octopus topped with a pea-sized dollop of sauce.
