Restaurant Details

Shirokane sits quietly inside Tokyo, Japan — a residential neighborhood of wide pavements and unhurried streets, where the pace of the city softens noticeably. A few minutes from Shirokanedai Station, down a stretch of road lined with low buildings and evening light, Wagyu Yakiniku KIM has occupied the same address since 2010. The entrance gives little away. Inside, the room settles into focus.


The interior is spare and considered — counter seats along one wall, table seating arranged with enough distance between them, and two fully enclosed private rooms for those who prefer the evening to belong entirely to their own table. The atmosphere is designed for adults: unhurried, uncluttered, and lit at a level that encourages conversation over spectacle.

The kitchen sources its wagyu through direct auction — Sendai beef, Yamagata beef, and other premium Kuroge Wagyu selected cut by cut for this specific restaurant. The philosophy is precision over abundance. Each part of the animal is prepared and served according to its own character: some cuts salted, some sauced, the method chosen to let the meat speak rather than the seasoning.

A house-made dashi broth anchors the signature filet katsu, a wagyu-specific preparation that arrives at the table warm, the cut tender at its center, the flavors accumulated quietly through the broth. Wine, selected by a sommelier to accompany the meat, moves through the evening alongside the courses.


You come for the wagyu. You stay because the room, the sequence, and the quiet attention of the evening hold together in a way that is easy to return to.
