Join Chef Uchida for this sushi-making class in Kyoto. With over 40 years of experience as a sushi chef, Chef Uchida has recently channeled his knowledge into teaching. His goal is not just to teach how to make sushi but also to draw from his experience to share insights on sushi history and cultural significance with his guests, a history that, he says, even many Japanese people don’t know.
This class takes place at Chef Uchida’s kitchen in central Kyoto, just across the river from the historical streets of Gion. This is the perfect setting for a class that takes its guests back in time to the very origins of sushi. Chef Uchida will share his knowledge of the cuisine and answer any questions you might have.
After an overview of sushi history, the practical portion of the class will begin. First, you'll change into a white chef’s jacket. Next, it'll be time to learn to make 14 pieces of sushi, including eight different types of nigiri (rice morsels topped with raw fish or other ingredients.) The class will cover important elements like seasoning and shaping sushi rice, cutting fish and finessing the perfectly put-together bite.
Chef Uchida will also share how to make six pieces of sushi with pickled vegetables from Kyoto to complement the assortment. Ingredients like cucumber, eggplant and turnip with a unique tanginess make for the ideal palette cleanser between fish bites.
Chef Uchida chooses the best ingredients for you to enjoy, so the menu isn't fully fixed, and no two versions of this experience are the same, much like the nature of sushi itself.
