Restaurant Details

A short step away from the energy of Omotesando in Tokyo, Japan, the street noise fades and a different kind of stillness takes over. Hisashi Sushi sits in the calm of Kita-Aoyama, its interior shaped by two distinct counters: one formed from Aso lava stone, the other a U-shaped arrangement of fragrant Kiso cypress. The grain and texture of the wood are treated not as backdrop, but as art — the space refined enough to impress, relaxed enough to breathe in. What remains, once seated, is the chef, the fish, and the space between them.


The philosophy here is one of honest craft. Each morning, seafood is selected with the kind of attention that resists shortcut. The shari is made from organic rice grown in Kumamoto, nourished by the naturally filtered waters of the Aso highlands — seasoned with Iio Jozo rice vinegar from Miyazu, agave powder, and Mataichi salt from the Itoshima coast. Two quiet finishing touches complete every piece: a house-made salt reduced slowly from Itoshima seawater, and a nikiri of Mitsuru soy sauce, aged to a depth that speaks without overstating.


The format is à la carte — an openness that invites guests to move at their own pace through the day's premium seafood selection. A pairing menu of craft beer, aged sake, premium tequila, and wine runs alongside, each chosen to accompany rather than compete. A luxurious moment to savour the traditions of Japanese cuisine, without any need for formality.
