Sushi Kuriyagawa in Ebisu approaches Edo-mae sushi with a balance of tradition and experimentation.


Since opening the restaurant in 2012, the chef has centered his work on a simple idea: each piece of sushi should be paired with the rice that best complements the fish.


By alternating between red vinegar-seasoned rice and rice vinegar-seasoned rice according to the richness and character of the seafood, he creates subtle differences throughout the course. The result is an experience shaped as much by the rice as by the fish itself.


The chef grew up in Izu Kogen, Shizuoka Prefecture, in a family that ran a sushi restaurant. He began his training at 18, working at sushi restaurants in Tokyo and Kanagawa before gaining further experience in traditional Japanese and kappo kitchens. Those years helped him develop a broader understanding of ingredients, techniques, and Japanese cuisine beyond sushi.


At 28, he became head chef of a sushi restaurant in Tokyo's Nishi-Azabu neighborhood. Four years later, he opened Sushi Kuriyagawa in Ebisu, bringing together the discipline of Edo-mae sushi with ideas drawn from Japanese cuisine more broadly. Rather than adhering to a fixed format, he continues to refine his style to make sushi dining engaging and enjoyable for guests.


That philosophy carries through to the course menu. Instead of serving all the appetizers before the sushi, Sushi Kuriyagawa alternates creative shuko with carefully prepared nigiri. The changing pace brings different flavors, textures, and techniques into focus as the meal unfolds.


The restaurant's signature approach to shari is at the heart of every course. Different types of seasoned rice are paired with leaner and richer fish to bring out the best in each ingredient. Seasonal appetizers, inspired by the chef's experience in traditional Japanese and kappo cuisine, complement the nigiri and add variety while staying true to Japanese culinary traditions.


The dining room reflects the same balance found in the cuisine. Traditional touches blend with contemporary design, creating a space that feels refined yet welcoming. High ceilings, a polished counter, and an open kitchen give guests a clear view of the chef at work. At the same time, floral arrangements and thoughtful design details create a calm, relaxed atmosphere.
