Sushi Morita’s menu embodies true Kyushumae-style sushi which is rarely seen in current sushi restaurants even in Kyushu itself, making this restaurant a rare and welcome exception. On top of the additional complementing ingredients for their sushi, the main difference between Kyushumae-style and Edomae-style is in the temperature in sushi rice — Sushi Morita uses room-temperature sushi rice for every dish.
The creative combination of ingredients to come up with interesting dishes sets this sushi restaurant apart from others as well — putting together uni and caviar isn't a usual combo, but it works for Sushi Morita.
