Following the success of its flagship store in Ebisu, Sushi Hatsume makes its much-anticipated sequel in Shinjuku, bringing along with it its distinct nonchalant luxury, deep appreciation for great wines and sake, and a creative omakase led by some of the city’s most talented chefs.


This hidden sushi destination redefines simplicity by emphasizing technique over theatrics, paired with a dedication to conscientious sourcing. At the helm is a prolific head chef who honors the restaurant’s lineage while adding his own artistry, often beginning the experience with the signature sea urchin “hot dog,” a sushi roll topped with lobster and egg sauce, blanketed with generous sea urchin and wrapped in crisp seaweed.


Other items on the omakase are more seasonal. On select evenings, diners can be treated to contemporary iterations of starters like grilled mozzarella with dried mullet roe before moving on to impeccably executed fish shaped against red vinegar-laced rice: red sea bream coaxed with yuzu, kombu-cured grunt nigiri and pillow-tender medium fatty tuna.


These flavors are doubled — no, tripled — by the restaurant’s outstanding selection of rare sake and sommelier-curated wines. Sushi chefs guide diners through thoughtful pairings, perhaps suggesting an Austrian white to complement squid nigiri or the rare Aramasa sake to enhance the umami depth of horse mackerel. All of this unfolds in a chic, intimate space centered around a beautifully polished counter.
