In Tokyo, Japan, the name Sushi Inase first earned its following in the quieter streets south of Shibuya — a basement counter where the chef's commitment to Edomae technique drew a devoted crowd, night after night. That same kitchen philosophy now opens in May 2026 in Shinjuku, and the transfer is faithful in every detail.
The new Shinjuku location descends below street level just as the original did. An L-shaped, hinoki-style counter. A small number of seats. The city's largest interchange humming somewhere above, irrelevant by the time the first course arrives.
The foundation of the meal is the shari. The chef uses a proprietary blend of red vinegar, aged for over a decade, combined with Koshihikari rice from Fukushima prefecture, cooked in a traditional iron pot and seasoned with careful attention to humidity and season. Each piece of nigiri arrives with its own condiment, chosen specifically for that fish alone.
The omakase course moves through the season's seafood in the chef's own order — small dishes opening the evening, nigiri following in careful succession, a closing soup and dessert bringing the meal to rest. The Premium course offers a quieter elevation: one or two ingredients exchanged for rarer choices, the ending weighted differently as a result.
