Passing through the noren, a grand hinoki cypress counter commands immediate attention within the timber-cloaked space. It’s a massive structure: an elevated platform extends the chef’s workspace to the dining counter, allowing him to hand sushi rolls and nigiri across with a flourish. Fresh flowers are always on display, too.
Sushi connoisseurs will find excitement in the Edomae-rooted omakase, where the chef’s deep understanding of each sea dwelling and maestro technique is displayed. He processes the fish hand-picked from Toyosu Market following traditional Edo methods — aging, curing, marinating or processing the fresh fish to lock in umami. He proudly shares stories, like that of his rare conger eel — a plump beauty he says is caught only “one in a hundred.”
The generous seafood, transformed into precisely sliced neta, is bolstered with pesticide-free Tsuyahime rice from Yamagata Prefecture, laced with two types of vinegar based on the fish's flavor profile. For one, the rice vinegar-based imparts a subtle sweetness, while the other, a unique red vinegar blend, adds depth without sugar.
If his movements behind the counter are musical, the pacing of the course is rhythmic— a symphony of flavors and temperatures. A warm, fluffy, sweet dish might be followed by something cold and salty. Seasonal ingredients served in small portions interrupt the constant flow of sushi.
Although the shop’s ambiance may seem formal at first glance, the owner fosters a welcoming atmosphere through lively conversations with customers.
