Sushi Namba's Hibiya branch puts the priority on temperature, strongly believing that the key to the perfect sushi is the right balance of heat in the sushi rice and fish. They follow this approach to the extent that the temperature of each sushi dish is stated on the menu — an unusual touch, but one that shows Sushi Namba’s dedication to consistency.
