He sources his fish from all around the country, timed to coincide with the seasonal availability at the nation’s ports. Once he has them in his hands, he prepares them in ways that create unbeatable layers of texture and taste. The scoring on the surface of his fish allows the flesh to fall apart in the mouth effortlessly. Aside from the excellent nigiri, a great range of small side dishes is also on offer, of which the shrimp pickled in chinese rice wine is one of the best.
