Though only launched in 2024, Sushi Shintomi Uosen already feels like a beloved local fixture. The omakase experience is led by a skilled chef who crafts a new menu each day for those fortunate enough to snag a counter seat. Diners can expect a remarkable sushi showcase, with rice made from a unique blend of red and white rice vinegar. Hailing from Tsukiji, the chef taps into his extensive network of classmates, seniors and juniors at the market, ensuring every ingredient is selected by professionals with a keen eye for quality.
