As one of Japan’s most famous foods, there are many restaurants dedicated to the craft of tofu all across Japan, but few are as renowned for their dedication to the craft of this soft white beancurd as Ume no Hana. The restaurant’s philosophy is rooted in the use of seasonal ingredients, purity of taste, and the meticulous preparation of tofu in all its forms. Each meal at Ume no Hana is an exploration of tofu’s versatility, from silky-smooth tofu to more textured varieties, presented in innovative ways that both respect tradition and express modern sensibilities. Accordingly, standout dishes encompass a wide range of styles, from classic agedashi tofu (tofu deep-fried and served in dashi broth) to more creative inventions like tofu dumplings. The restaurant is especially proud of its yuba, or tofu skin, which is served in a number of different ways, including in soup as well as fried — each one carefully crafted to highlight the tofu’s texture, flavor, and ability to absorb the essence of its accompanying ingredients. While tofu remains the star of the menu, Ume no Hana also offers an array of dishes featuring premium seasonal ingredients, such as a selection of Kyoto’s famous vegetables and fine wagyu beef.
