Akashari sushi, a type of Edomae-style sushi often found in high-end restaurants, has a distinct, pungent and umami flavor. Its rice is seasoned with akazu vinegar made from sake lees, giving it a reddish tint. In this sushi-making workshop in Kyoto, you’ll discover the secrets to this unique kind of sushi and taste how different types of vinegar can infuse sushi with various colors and flavors.


Supervised by a registered dietitian, this sushi-making class will teach you both sushi-making techniques and the intricacies of Japanese ingredients. You’ll compare three kinds of sushi vinegar, make akashari sushi hands-on, led by a knowledgeable host, and enjoy your premium sushi meal with akadashi (red miso soup), a great pairing for sushi. You’ll take home an easy-to-follow recipe so you can make authentic sushi again anytime.


Gluten-free, vegan, halal-friendly, and other food accommodations may be available if requested within enough time in advance.
