Step into a quiet Tokyo neighborhood and into your host’s home kitchen, where the scent of simmering kombu gently fills the air.


This intimate cooking session centers on dishes many Japanese families grow up with, prepared carefully from scratch and shared around the table.


You begin with dessert. Matcha is whisked into cream and milk, its grassy aroma rising as it turns a soft jade green. The pudding is poured and set aside to chill, a calm start before the heat of the teppan.


Next comes the foundation of Japanese cuisine: dashi. You learn how to draw deep umami from kombu and bonito flakes, watching the clear broth turn golden.


Fresh fish is minced, then kneaded in a large Japanese mortar and pestle until smooth and elastic. Shaped into delicate balls and slipped into the broth, they cook gently, becoming tender and airy. The soup is light yet deeply savory, warming, and fragrant.


Then the teppan is heated. Cabbage, meat, and noodles are folded into batter and spread onto the metal surface. The sound of sizzling fills the kitchen. With guidance, you practice flipping your okonomiyaki in one confident motion. A glossy layer of sauce is brushed over the surface, followed by a drizzle of mayonnaise and a flutter of bonito flakes that dance in the heat.
