The journey towards seeking new culinary possibilities led chef-owner Satoshi Furuta to open a restaurant in Gifu, the original location of CHIUnE. He didn't want to put a genre to his type of cooking, hence he left it open for debate. Some may say it's a twist to Western cuisine, others might argue that it’s modern Japanese. At the end of the day, it's Chef Furuta's unique and original style, to be enjoyed for its originality and deliciousness.
When CHIUnE moved to Ginza, the area most well known for high fancy restaurants, it became extremely hard to secure a table without booking well in advance (say, a couple of months). If you're lucky enough to get a reservation in, be sure to try the consommé with truffle scent, the signature dish at this exciting center city restaurant.
