At SAIME, we slowly cook oil-free, additive- and chemical-fertilizer-free vegetables sourced mainly from contracted farmers, using traditional earthenware.
Before use, the earthenware is soaked in water overnight to fully absorb moisture. As the vessel is heated by charcoal, the moisture it holds slowly transfers heat, gently steaming vegetables, fish, and meat.
While conventional cooking methods concentrate umami by evaporating moisture from ingredients, cooking with earthenware allows heat to reach the ingredients while preserving their own natural moisture. This keeps the food fresh and juicy, letting guests experience each ingredient's original texture and flavor more fully. No oil is used at all.
We avoid pre-seasoning as much as possible, drawing out the natural power of each ingredient. To help guests more deeply sense the temperature, texture, and aroma of each dish, our cuisine is meant to be eaten by hand.

Our aim is to awaken a simple, pure sensibility that modern life often lets us forget, to evoke the feeling of Japan's seasons, and to gently heal and warm both body and mind — offering what we call "Jomon cuisine revived for the present day."
We also offer a vegan course centered on vegetables, and can accommodate vegan, vegetarian, pescatarian, gluten-free, halal-friendly, Jain, and five pungent spices (wu hun) dietary needs.
Pregnant guests, children, and those who don't drink alcohol are all welcome to visit with ease.
