A holy trinity of premium Japanese cattle are used at this yakiniku grilled beef shop in Sangubashi: Mishima-ushi, Kuchinoshima-ushi (a wild variety of beef), and Takeno-tani Tsuru-ushi (a breed which is only slaughtered at one point in the whole year).
These represent some of the most genetically pure breeds of Japanese cattle, meaning that Ibusana surely offers one of the most authentically Japanese wagyu in the city.
The set-course meal lasts around two hours and features a plethora of different cuts and presentations. The premium beef presented simply with salt, so you can enjoy its natural flavors — as pure and authentic as the cattle themselves.
