Authentic French dining does exist here though, at SALLE À MANGER, a humble restaurant serving classic French dishes, specifically the traditional cuisine of Lyon. Hisashi Wakisaka devoted his studies to traditional French cuisine and has traveled all around to hone his culinary craftsmanship. His desire to preserve regional culinary traditions is prominent in the dishes he creates. His restaurant's signature dishes are the chicken liver cake served with Ris d'Agneau and the lamb sweetbreads stewed in tomato sauce. The menu here is based only on classic recipes that the chef tweaks ever so slightly to give a unique character.
