Furusato Ryouri Suginoko
Furusato Ryouri Suginoko
Seven seasons. One kitchen. Miyazaki, from the source.
Restaurant Details
Along Tachibanadora, the wide central boulevard of Miyazaki City, Japan, a building has stood quietly receiving guests since 1970. There is no fanfare at the entrance of Furusato Ryouri Suginoko — only the soft creak of a door and the unhurried welcome of a place that has never needed to announce itself.
The kitchen operates by a simple but demanding principle: the menu changes seven times a year. Not twice, not four times — seven, tracking the precise shifts of Miyazaki's seasons with a closeness that most restaurants do not attempt. Skilled chefs source seafood directly from the Hyuganada Sea, and Miyazaki beef from local ranches, building each course around what the land and water are offering that week, not that quarter.
Among the dishes that draw guests back is the katsuo no yakikiri — skipjack tuna left skin-on, seared briefly over high heat, and brought to the table still warm. It arrives with housemade ponzu and soy, two quiet accompaniments that let the fish speak. Come summer, hiyajiru joins the table: a chilled dashi poured over barley rice and soft tofu, cool and clean against the Miyazaki heat. These are not elaborate constructions. They are dishes that understand restraint.
The dining rooms range from counter seating with sunken kotatsu to small private rooms — each wrapped in the calm of a traditional Japanese interior. Within that stillness, the seasonal dishes arrive one by one.
A meal here settles into memory without effort. That is how it has always been.
