The late owner of Tahei Sushi, the sushi grandmaster Shinjiro Takatani, was a famous innovator. He left his mark on Kanazawa, having developed many young disciples who now run their own restaurants in the town and around the country.
His innovative sushi steaming method is still practiced in his store, making their blackthroat seaperch among the most tender and flavorful in the county. Nowadays a young relative of the late master, and his understudy for 20 years, carries the torch passed down to him.
In the chef’s choice omakase menu, he curates platters with three mixed pieces of sushi to contrast the textures and tastes of the ingredients: imagine citrus ponzu flavors played against soy sauce, or squid alongside tuna.
Although the passing of Takatani-san in 2018 was a great tragedy for the Japanese culinary community, diners here are comforted by the fact that his legacy lives on in all its glory, and will continue to do so for many years to come.
