Chef Masahiro Koike, trained in both Kyoto and Tokyo, crafts dishes that balance authenticity and creativity, using Japan’s finest seasonal ingredients.


The foundation of each course begins with water and rice — soft spring water from the Izu Peninsula used to draw deep umami from kelp and bonito, and rice cooked in a traditional iron kama for a gentle, fluffy texture. From spring mountain vegetables and wild ayu to charcoal-grilled wagyu and homemade sesame tofu, every element is treated with care and mindfulness.


With just eight counter seats, guests can witness the calm artistry of the kitchen as flavors shift with the seasons. Despite its Shibuya location, the space exudes tranquility — warm wood interiors, subtle lighting, and an atmosphere that invites slow appreciation.


Whether dining solo, hosting a quiet business meeting, or celebrating a special occasion, Yamaboushi provides more than a meal — it offers a moment of stillness and refinement in the heart of Tokyo. Reservations are essential. Cancellations made within three days are charged 50%, and same-day cancellations incur a 100% fee.
